I am very proud of these two beauties. Last year I only got one eggplant about a fourth of this size and it had a huge bite out of it. I sliced these up, roasted them and made a delicious pan of Moussaka.
Beautiful! We had a little garden at the preschool I taught at before I had Noah and our eggplant was the kids’ favorite to watch grow. Once during recess a little boy accidently threw a ball in the eggplant and his friend yelled, “Watch out! That plant has eggs in it!” It was so cute. Anyway, I love eggplant, yum!
Somehow I managed to unsubscribe myself from your blog, and I’ve missed an entire Summer of updates. I’d been thinking that it was unlike you to be AWOL for so long. These are beautiful.
Moussika, (i’ve no idea how to spell it)! I don’t know if it’s the same dish or not. But that was the first food Micah made for me. He learned it in Bulgaria.
