I’ll blame it on the fact that this year’s summer has been the hottest on record so far, with our home’s average temperature being 80 degrees, the thought of cooking over a hot stove or warming up the oven long enough to cook anything substantial has become a thing of the past. The first year of our marriage I scoffed at the idea of even purchasing the likes of macaroni and cheese and canned soup. Now, they’re common place. The last two Sundays we’ve had canned lentil soup, mac and cheese makes the meal plan nearly every week, and frozen pierogies and pizzas are now welcomed in our home.
I always feel a little embarrassed when the topic of dinner comes up and I quizzically ask “Macaroni and Cheese?!” Tom loves this new change and has been thrilled with the new additions to our diet. Once no meal was complete without at least two vegetables and a fruit. Now I’m lucky if I heat up some canned green beans and hand out apples.

Love it! You’ll find hat macaroni and cheese has just as much place in your food storage as wheat. And yes, it is the handiest quick-fix meal for little ones. (add hot dogs and I’m a huge fan, too) I will admit that I do not buy boxed meals as often is it would be convenient to have, but when I do I never recieve complaints when I “finally” buy mac and cheese. Happy little smiles all around….. and mommy only has one pot to clean! =)
Story of my life. At least lately. Pregnancy + no husband to cook for (because of night float rotation) we stick to mac ‘n cheese, quesadillas, peanut butter & honey sandwiches, and brinner (or pancakes & eggs). Healthy right? It’s not very fun cooking for 1 person (luke doesn’t eat much). At least you are having some canned veggies! Haha.

Nice to know even you take a reprieve once in a while! Before Eden was born. I’d sworn off boxed Mac and Cheese after looking at the nutritional value. I especially thought I’d never give it to my daughter. Funny how perspective changes! The pros sometimes outweigh the cons.
