A need for change


Around this time of year I always start to feel anxious for change. The weather never changes as soon as I would like, and as a result, my choice of wardrobe doesn’t change- because I am stuck wearing the same sweaters and pants. After realizing that my feelings were caused by a need for change, and realizing that I didn’t have any control over the weather, and I going out and buying a new wardrobe was out of the question, I pondered other ways to incite change. It turned out cooking was the easiest. This week our menu included:


This biscuits and gravy recipe from my Vegetarian Times magazine. This is just the picture from their website. It turned out pretty good, though I felt it needed a bit more flavor. But it was healthy- and different!

-Split pea soup

Pierogies with an onion/lemon/yogurt/dill sauce (Tom made these and they were amazing!)

-Loaded Oatmeal cookies, (with chocolate chips, oatmeal, craisins, flax, and wheat germ) from March’s Better Homes and Gardens magazine. These were definitely a keeper. Tom says he things they would be better without the chocolate- but I say chocolate is good in everything. I added a bit more spices than it called for and I think it was an added bonus!

-Cajun blackened Talapia fish tacos. These turned out okay. The fish we used had been in our freezer for a bit too long I think, it would have been much better on a milder fish. But I liked the idea and it was quick. The rub was good.

-I even made homemade bread for a change!

Other changes included working two exercising sessions into my week- I ran through the cultural gardens on MLK boulevard- which I highly recommend visiting if you live in or near Cleveland. They are beautiful and I great way to learn about international figures.  And then I did some Taebo and pilates. Which I must say it is about time. I’m pathetically out of shape, more so than I would like to admit. But I am deteremined. For Lent, I am going to committ to exercising twice a week. And then hopefully after Easter the weather will have improved and I can increase it to three or four.
