Thanks for the thoughtful cards! 

    I wanted to thank all of you who were so kind to send, say, or sing your birthday wishes. I had a wonderful birthday week! Wednesday Tom and I had a nice, but rushed breakfast of Grits with butter and cinnamon sugar- a sentimental favorite of mine! We opened cards and presents, and rushed out the door. It was a busy day for both of us. However I loved getting the e-mails, calls, and cards from you. Mary was in town the weekend before so we celebrated with her then. She made this incredible grapefruit sorbet, yes from scratch. (If you didn’t know grapefruit is my favorite food.) She also made this delicious citrus angle food cake. She’s amazing!

   Tom felt really bad that this week was so stressful for him, but fortunately we had tonight to spend and celebrate together. As is Foutz style we decided to cook for our date night. We made three things from the “Gourmet” recipe book Mary and Steve gave me for my birthday. Our favorite was “Mahi mahi with Grapefruit Beurre Blanc.” Continuing on with the grapefruit-themed birthday we decided to try this sauce out over some frozen Mahi mahi we had bought from Costco. I’m not exaggerating when I say it was incredible. It was surprisingly simple but delicious. It called for shallots but we didn’t have any, so we used green onions. Tom made a “Pasta with Asparagus Lemon Sauce” and I made some “Cheddar Shallot Biscuits”. The Pasta was great, (I’ll definitely have to give you the recipe Mom, it would be a great use of all your fresh asparagus!) it had a beautiful green color, and a nice light flavor. The biscuits were fine, nothing great though. They were a bit too oily for us. Either way it was a fun way to spend Friday night, and certainly a cheaper way to have a “gourmet” meal.

 

 

    One more thing, several weeks ago two people came to town to visit. Neither had seen me in around a year, and both commented on how much older I looked. What’s that all about!? It caught me by surprise! Regardless, turning 22 this year I have never felt younger- that’s the joy of marrying an older man!
