Using modern conveniences


In response to my previous post about how to use modern conveniences to facilitate more healthful living, I had to share an experience I had yesterday.

ALDI had their 5 lbs packages of fresh boneless skinless chicken breasts for $5.00 off. So I got 10lbs of chicken for around $5.00! But what to do with it all. I froze half of it, and decided to cook the other half. I plopped it all in the pressure cooker with some seasonings and a cup of water and 15 minutes later I had beautifully cooked chicken, and a pint of chicken stock! I was thrilled- but then realized, ugh I have to shred all that. Then I rememebred a tip I had read on a blog a while back, she had used the cookie paddle on her kitchen aid to shred chicken. I figured it wouldn’t hurt to try. The results were fabulous- five pounds of chicken shredded in minutes! I then packaged it in 2 cup portions and froze it, keeping a bit out for chicken salad. Amazing!
